We are delighted to welcome back Justin Sledge, former chef of the Attic Lounge and chef de cuisine in the Dining Room, as our new executive chef. Most recently executive chef at Seattle's 35th Street Bistro and the Daily Grill, Sledge brings to Salish nearly 15 years of culinary experience -- including time in the kitchens of Oceanaire Seafood Room, the Scottsdale Princess Resort, the historic Jasper Park Lodge, the Fairmont Miramar and the Fairmont Acapulco Princess. Sledge holds a degree from the American Culinary Federation and has also taken courses at the Culinary Institute of America in French and Mediterranean cuisines. Mushroom foraging, fishing, hiking and family time occupy him when he's not in the kitchen.
“I’m thrilled to be back near the beauty of the Snoqualmie Valley here at Salish Lodge & Spa,” Sledge says. “I have yet to find another team and venue so committed to culinary excellence.”
Jack Strong brings nearly 20 years of
experience in the culinary industry to the position of chef de
cuisine of The Dining Room at Salish Lodge & Spa. Hailing from
Siletz, OR, Strong’s Native American heritage plays a strong role in
his culinary philosophy. He takes pride in leveraging the
farm-fresh, native ingredients of the region to develop his
indigenous Northwest cuisine.
Strong most recently excelled as chef de
cuisine at the AAA Five Diamond and Mobil Five-Star rated Kai
Restaurant in Chandler, AZ and his previous experience includes sous
chef at Windows on the Green at The Phoenician in Scottsdale, AZ and
eight years at Adam’s Place Restaurant in Eugene, OR.
Strong is a graduate of the culinary program
at Lane Community College in Eugene, Ore. In 2008 he was nominated
for the James Beard Award long list, “Best Chef: Southwest.”
Pastry Chef Laurie Pfalzer
Chef Laurie Pfalzer began her career as pastry cook
at Salish Lodge & Spa in 2006 and quickly ascended the ranks to become
pastry chef in 2007. During her tenure, she has built an innovative
culinary program, creating and implementing pastry menus for The Dining
Room, The Attic Lounge, wine dinners and other special events. Pfalzer
delights guests with a range of delicacies including handmade truffles,
special occasion and wedding cakes, ice creams, sorbets and more.
Prior to joining Salish Lodge & Spa, Pfalzer excelled
as a pastry cook and baker at King Arthur Flour in Norwich, Vt. Pfalzer
has also held pastry cook positions with Topper’s Restaurant at The
Wauwinet Inn on Nantucket Island and Baby Cakes Bakery and Café in
Poughkeepsie, NY. She holds a bachelor’s degree from the University of
Washington and also graduated from the Culinary Institute of America in
New York, where she achieved top honors.
